03Department of Dairy Microbiology, College of Dairy Science and Technology, conducted a three day training programme on ‘Commercial Curd preparation and Handling of Starter culture’ at KVASU Dairy Plant from 15.09.2011 to 17.09.2011. 15 participants, comprising of small scale entrepreneurs in Dairy sector and Kudumba Sree unit members from Thrissur, Malappuram, Kottayam and Idukki districts attended the programme. Manufacture of curd, yoghurt, sambharam, Mistidahi and other innovative fermented product were demonstrated in detail with the support of theory. Propagation and maintenance of conventional as well as DVS cultures, their importance, GMP and TQM concepts were covered in the training programme. Participants were also given an opportunity to prepare the products on their own. All the participants were given activated DVS culture for their use. Feedback reflected that, the information and technology gained through training will be helpful for participants in transforming their units to commercially viable enterprises.Dean, CDST Dr. R.
