23 The Indian Dairy Association (Kerala Chapter) organized a one day National Seminar on ‘Science of Flavour’- An industry perspective” on 20th December 2014 at Mannuthy- Thrissur. Around 175 participants representing various educational institutions, Food and Dairy processing sector, flavor industry attended the seminar. The seminar commenced with an inaugural function at 10 am. Dr. S N Rajakumar, Professor and Head of Department of Dairy Technology, CDST, Mannuthy gave the welcome address. The inaugural function was presided over by Dr. P. I. Geevarghese, Chairman, IDA Kerala Chapter. The inauguration of the seminar was done by Dr. Srinivasa Gopal, Former Director CIFT Kochi. Dr. B V Venkiteshaiah, former Dean Dairy Science College Bangaluru felicitated the occasion. Dr. Ligimol James, Organizing Secretary delivered the vote of thanks. The official inauguration was followed by three presentations during the forenoon session. Mr. Joseph Thomas, Managing Director, Duke Thomson’s India Pvt. Ltd gave the first presentation on ‘Flavours – An industrialists perspective”. In his presentation he explained the challenges and opportunities faced by the flavour manufacturers and also the rising demand for flavours in the food processing sector. Dr. Merina Benny, General Manager, QA and RD, Arjuna Natural Extracts Ltd, Aluva gave the next presentation on “Applications of oils, oleo resins and standardized extracts in food industry” where she elaborately discussed on the various natural flavours and its advantages over their synthetic counterparts. The final presentation for the forenoon session was given by Mr. Baskaran Parameswaran, Managing Director, Akras Flavours India Pvt. Ltd on “Basic Concepts of Flavours”. During his presentation he described about numerous plant sources of flavouring compounds and its possible extraction methods and uses. The presentation for the afternoon session was given by Mr. Shareef Ahmad, Regional Manager Indian Subcontinent and Middle East, Hygiena International Ltd. on “Redefining Food Microbiology- Rapid Solutions”. The rapid microbiological detection methods and the detection kits available were demonstrated during the presentation. This was followed by an exhibition titled “Flavour Horizons” in which several natural flavours, starter cultures, hygiene monitoring test kits etc. were displayed. The seminars concluded with a valedictory function were the participants expressed their views and opinions on this seminar.
